cacao banana oatmeal & avocado pudding

Although I still have my fair share of banana ice cream and cold smoothies even in winter, chilly mornings just call for warm and comforting breakfasts sometimes… and this cacao oatmeal is the perfect answer. Especially if accompanied by some avocado pudding. A breakfast bowl jam-packed with energy, nutrients and antioxidants from the oats, avocado, dates and raw cacao.

cacao banana oatmeal

yields 1 to 2 portions

1 cup rolled oats

1 cup plant milk*

½ cup water

1 ripe banana

2 tbsp Sevenhills Wholefoods raw cacao powder

* I used homemade almond & hazelnut milk

Pour the plant milk and water in a medium-sized pot over high heat and bring to a boil. Add your oats and lower the heat. Mash the banana and stir it in the pot, together with the cacao powder (sift it beforehand in case of lumps), and mix thoroughly until evenly combined. Cook for about 5 to 10 minutes or until creamy, stirring constantly.

yields approx. 1 cup of pudding

½ ripe avocado

3 medjool dates

2 tbsp cocoa powder

3 tbsp plant milk

3 tbsp water

1 tbsp pure maple syrup

Pit the dates and add them to a powerful blender – I used my nutribullet, along with half an avocado, cocoa powder, plant milk, water and maple syrup. Blend for about one minute until creamy, scraping down the sides every now and then.

Serve the warm and creamy oatmeal with a dollop of avocado pudding and your desired toppings – I went with raspberries, wild pecans, raspberry jam and a drizzle of pure maple syrup.
