cinnamon sugar cookies with vanilla cashew drizzle

Moky is finally back with a new recipe, could you believe it?! What else could I share with you, if not a cookie recipe? Perfect for this time of year, to pair with a cup of warm tea, a book and a blanket. These cinnamon sugar cookies are wonderful, and the vanilla cashew drizzle even more… it may actually be my favourite thing about these cookies, literally dreamy!

cinnamon sugar cookies

yields 30 small cookies

½ cup vegan butter

¼ cup coconut oil, liquid

1 cup raw cane sugar*

1 aquafaba egg (3 tbsp)

1 tbsp molasses

2 ¼ cups flour

2 tsp baking powder

2 tsp cinnamon

pinch of salt

* I used my favourite, mascobado sugar, for a healthier and nutrient-dense alternative.

Preheat the oven to 345°F/175°C. Cream the vegan butter, coconut oil and sugar in a large bowl, then add the aquafaba egg and molasses until thoroughly combined and fluffy. Sift the flour and baking powder in a separate bowl, add cinnamon and a pinch of salt and mix well. Combine the dry ingredients with the wet. Scoop out tablespoons of dough, form little bowls of about 2-3cm (1 inch) and place on a baking tray covered in parchment paper, leaving enough space between each cookie. Cook for 12 minutes.

vanilla cashew drizzle

yields approx. 1 cup of cream

½ cup cashews

½ cup soy milk

¼ cup powdered sugar

½ vanilla bean

Split the vanilla bean in half and scrape out the seeds. Add the seeds to a powerful blender, along with the cashews, soy milk and powdered sugar. Blend for one to two minutes until creamy, scraping down the sides every now and then if needed.

Drizzle the cream over the cookies and top with chopped nuts.
