sweet potato mini pancakes

sweet potato mini pancakes

yields 14 mini pancakes

1 cup whole wheat flour

½ cup almond flour

1 ½ tsp baking powder

½ tsp vanilla powder

½ cup sweet potato puree*

1 cup soy milk

* I baked one small sweet potato, let it cool, then blended it with enough soy milk to obtain a creamy puree.

Preheat a non-stick pan on low heat. Sift flours and baking powder in a bowl. Add vanilla powder and whisk well. Mix in sweet potato puree and 1 cup of soy milk until thoroughly combined. Pour a spoonful of batter on the preheated pan and smooth it out  with a spoon. When bubbles begin to form and the surface dries, flip the pancake and cook for another 30 seconds. Repeat the process until you run out of batter. Serve with strawberries, shaved dark chocolate, chopped pumpkin seeds, puffed buckwheat and a drizzle of rice malt syrup.

Or some cashew and banana chocolate cream…

cashew and banana chocolate cream

yields ½ cup of cream

a handful of cashews

1 tsp rice malt syrup

1 banana

2 tsp cocoa powder

1 tbsp soy milk

Simply blend the ingredients in a powerful blender – I used my new nutribullet! – and mix until a creamy mixture forms.

  1. These look INSANELY good!! I am looking for a great vegan pancake recipe but never thought of including sweet potato. Definitely going to give these a go!
